Menü analizi, bir restoran, otel, kafe veya diğer yemek hizmeti işletmelerinde sunulan menülerin sistematik bir değerlendirmesini ifade eder. Giriş
Menü analizi menü yönetiminin en önemli araçlarından biri olarak kabul edilmektedir (Özdemir ve Çalışkan 2013). Menü analizinin içeriği iki temel boyuttan oluşmaktadır. İlk olarak menüde yer alan her bir menü kaleminin performansı yönetim tarafından belirlenen performans göstergeleri açısından değerlendirilmektedir (Çalışkan ve Özdemir 2011). Ardından beklenenin altında performans gösteren menü kalemleri için iyileştirme çalışmaları yapılmaktadır (Jones ve Mifli 2001).
 
Akademik açıdan bakıldığında ise menülerin yiyecek ve içecek işletmeleri için öneminin anlaşılması ile birlikte yöneticilerin yüksek performanslı menüler geliştirmek üzere kullanabilecekleri yöntemler üzerine yapılan akademik çalışmaların sayısı son 30 yılda hızla artış göstermiştir. Bu bağlamda menü analizi yazını gerek önerilen alternatif menü analiz yaklaşımlarının sayısındaki artış gerekse metodolojik açılardan kayda değer gelişmeler göstermiştir. Ancak bu gelişmelerin hemen hepsi yabancı yazın kaynaklıdır. 
 
Türkçe yazında ise menü analizi üzerine yapılan az sayıda çalışma (Rızaoğlu 1991; Bölükoğlu 2000; Bölükoğlu ve Türksoy 2001; Sarıışık ve Kaya 2004; Koşan ve Geçgin 2013) bulunmakta ve bunların ağırlıklı olarak yurt dışında geliştirilen yaklaşımları benimsedikleri gözlemlenmektedir.
 
Menü analizi alanyazınında önemli bir eksiklik geliştirilen modellerin uygulamacıların (restoran müdürleri, yiyecek içecek müdürleri veya mutfak şefleri gibi) ihtiyaçları ile bağlantılarının somut şekilde gösterilememiş olmasıdır. Uygulamacıların menüleri analiz etme sorununa bir çözüm olarak önerilen modellerin çıkış noktasını uygulamadaki ihtiyaçlar değil alanyazındaki eksiklikler oluşturmaktadır. Bu da alanyazındaki menü analizi modelleri ile uygulamacıların bağını zayıflatan önemli bir faktördür. 
 
Uygulamacıların görüş, yaklaşım ve yaptıkları uygulamaları inceleyen az sayıda araştırma da bu açıklamaları destekler nitelikte sonuçlara ulaşarak uygulamacıların alanyazının önerdiği yöntemleri pek kullanmadıklarını göstermektedir (Kwong 2005). Şu halde uygulamacıların menü performansını belirlemede gerçekte neye ihtiyacı olduğunu veya nasıl bir yaklaşım benimsediklerini çok iyi bildiğimiz söylenemez. Bu nedenle uygulamacıların ihtiyaçlarına cevap verebilecek basit ve etkili menü analiz yöntemlerini geliştirmek de güçleşmektedir. 
 
Bu çerçevede çalışmanın amacı, uygulamacıların (otel mutfaklarının şefleri) menü analizine ilişkin yaklaşımlarını nitel araştırma tasarımı kapsamında derinlemesine incelemektir. Böylece menü analizinin uygulamadaki durumu ile ilgili kavramsal bir yapı ortaya çıkarılabilecektir. Böyle bir kavramsal yapı da menü analizi ile ilgili geliştirilecek yeni modeller için bir ilk adım olabileceği gibi var olan modellerin etkinliğinin değerlendirilmesinde ve iyileştirilmesinde araştırmacı ve uygulamacılar için bir referans olabilecektir.
 
Alanyazın Taraması
Bu çalışmada alanyazında yer alan önceki çalışmaların genel olarak amaçları ve yöntemleri dikkate alınarak aşağıdaki gibi bir gruplandırma yapılmış ve ilgili yazın bu çerçevede incelenmiştir. Böylece önerilen menü analiz modellerinin sınıflandırılması ve eksiklerinin tespiti yerine alanyazındaki çalışmaların gruplandırılması ve her bir grup çalışmanın eksik kaldığı noktaların tespiti olanaklı hale gelmiştir.
 
Uyarlamalar
Yapılan çalışmaların sayısı açısından bakılınca menü analizi alanyazınında en geniş grubu uyarlamalar oluşturmaktadır. Bu çalışmaların ortak noktası muhasebe, finansman, stratejik yönetim ve performans yönetimi gibi alanlarda daha önce geliştirilmiş olan bazı modellerin menü kalemlerinin performansını analiz etmek üzere menü alanına uyarlanmış olmasıdır. Bu bağlamda ilk sistematik modeller matrislere dayalı menü analiz yöntemleridir. Bu matrislerin oluşturulmasında menü kalemlerinin yiyecek malzeme maliyeti, beğenilme düzeyi (satış miktarı) ya da katkı payı dikkate alınmış ve kullanılan performans göstergelerine göre farklı matrisler geliştirilmiştir. 
 
Bunlar arasında en çok bilinenleri Miller (1980), Kasavana ve Smith (1982) ve Pavesic’in (1983) çalışmalarında yer alan modellerdir. Bu modellerin ortak özelliği daha önce pazarlama ve stratejik yönetim alanında kullanılmış olan portföy analizinin menülerin analizine uyarlanmış biçimini oluşturmalarıdır (Cohen vd. 2006). Daha sonraki yıllarda Hayes ve Huffman (1995) ile Bayou ve Bennett (1992) matrise dayalı modellerde maliyetlerin tamamının dikkate alınamadığını ve bu nedenle menü kalemlerinin kârlılıklarının doğru biçimde hesaplanamadığını ileri sürerek menü kalemleri için kârlılık analizi modelleri önermişlerdir. Ancak bu modeller de menü analizi için tamamen yeni ve özgün bir yaklaşım getirmemekte, muhasebe alanında yerleşik olan maliyet ve kâr kavramlarını kullanmaktadırlar. Uluslararası yazında son on yıllık dönemde ise uyarlamalar grubu içerisinde iki ana yönelimin ağırlığı hissedilmeye başlamıştır. Bunlar;
 
Maliyetleri ve kârlılığı doğru bir şekilde belirleyerek matris modeline dahil edebilme (faaliyet tabanlı maliyetleme yöntemi)
Menü analizine çok sayıda değişkeni dahil ederek menü kalemlerinin görece verimliliğini hesaplayabilme (veri zarflama analizi)
Bir grup araştırmacı menü kalemlerinin her biri için maliyetleri eksiksiz ve doğru bir şekilde belirleyebilmenin ve böylece menü kalemlerinin kârlılıklarını daha gerçekçi şekilde hesaplayabilmenin muhasebe alanında geliştirilmiş olan faaliyet tabanlı maliyetleme (FTM) yönteminin menü analizine uyarlanması ile olanaklı olduğunu ileri sürmektedir. Bu bağlamda Raab ve Mayer (2003)
 
öncelikle FTM’nin restoran işletmeciliği alanında uygulanabilir olduğunu göstermişler, sonrasında Raab vd. (2006) yöntemi menü kalemlerinin performans değerlemesine uyarlamışlardır. Bu uyarlamayı yaparken de FTM ile oluşturulmuş matris geleneksel matris modeli (menü mühendisliği) ile kıyaslanmış ve FTM’nin kullanıldığı modelin daha doğru sonuçlar ürettiği sonucuna varılmıştır.
 
Bir grup araştırmacı da menü analizinde veri zarflama analizinin (VZA) kullanılmasını önermektedir. Buna göre menü analizine çok sayıda değişkeni ilave ederek menüde yer alan her bir menü kalemi için bir verimlilik puanı hesaplamak ve menüdeki kalemleri bu puana göre birbiri ile kıyaslamak olanaklı olabilmektedir. Bu çerçevede öncelikle Reynolds (2004) performans yönetimi alanında geliştirilmiş olan VZA’nın restoran işletmelerinin performans değerlendirmesinde yararlanılabilecek bir yöntem olduğunu göstermiştir. Bunu yaparken çok sayıda girdi ve çıktı değişkeni (Çıktı değişkenler: Satışlar, bahşişler, işgücü devir hızı. 
 
Girdi değişkenler: Ücretler, sandalye sayısı, servis personeli sayısı, rakiplerin sayısı gibi değişkenler) kullanmıştır. Restoran işletmeciliği alanına başarı ile uyarlandığı gösterildikten sonra Taylor vd. (2009) VZA ile menülerin performansının da değerlendirilebileceğini göstermek üzere bir restoran zincirinin üç biriminde bir örnek olay çalışması gerçekleştirmiştir. VZA ile elde edilen sonuçları, aynı menü kalemlerine uygulanan menü mühendisliği yöntemi ile elde edilen sonuçlarla karşılaştıran Taylor vd. (2009) veri zarflama analizinin daha etkin bir yöntem olduğunu ileri sürmüştür.
 
FTM ya da VZA yöntemlerinin menü analizine uyarlanmasında adım adım ve sistematik bir süreç izlenmiş olsa da aslında uygulamacıların ihtiyaç ve beklentilerinin bu süreçte dikkate alındığını söylemek olanaklı görünmemektedir. Süreç, uygulamacıların ihtiyaçlarını belirlemek yerine alanyazında var olan önceki modellerin eksikliklerini tespit etmekle başlamaktadır. Sürecin devam eden aşamalarında da uygulamacılardan geribildirim alınmamakta, her ne kadar örnek restoran işletmelerinde yöntem sınansa da buradaki asıl amaç, yöntemi işletmek için veri toplamak olmaktadır. Böylece son dönemde geliştirilen modellerin de uygulamacılardan uzak kaldığı sonucuna varılabilir.
 
Derlemeler
Nispeten az sayıda çalışmadan oluşmakla birlikte derlemelerin menü analizi alanyazınının kaydettiği gelişmeleri izleme, mevcut çalışmaların alana yaptıkları katkıları görme, var olan modellerin benzer yönlerini ve birbirinden ayrıldıkları noktaları anlama konusunda yararlı olduklarını söylemek olanaklıdır. Bu bağlamda, Taylor ve Brown (2007) ve daha yakın zamanda Özdemir (2012) tarafından gerçekleştirilen çalışmalarda menü analizi alanyazınına bütüncül olarak bakmaya olanak sağlayan sınıflandırmaların yapılmış olduğu görülmektedir.
 
Taylor ve Brown (2007) menü analiz modellerini esasen iki ana grup içerisinde ele almakta ve tek tek açıklamaktadır. Buna göre matris modelleri, kârlılık hesaplarına dayalı modeller ile LeBruto ve arkadaşlarının (1995) menü mühendisliğine işgücü maliyetlerini ekledikleri model gibi nicel menü analizleri geleneksel yöntemler olarak sınıflandırılmaktadır. Taylor ve Brown (2007), menü analizine alternatif yaklaşımlar içinde ise veri zarflama analizini göstermektedir. Özdemir (2012) ise menü analizi yaklaşımlarını dört ana grupta incelemektedir. 
 
Bunlar matris temelli modeller, matris temelli modellerin iyileştirilmesi ile geliştirilen modeller, kârlılık analizleri ve çok boyutlu modeller (veri zarflama analizi gibi) şeklinde sıralanmaktadır. Bu modeller tarafından sıklıkla kullanılan performans göstergelerinin de yiyecek maliyeti, katkı payı, ağırlıklı katkı payı, satış miktarı, beğenilirlik, brüt kâr, kâr ve satış fiyatı olduğu belirtilmektedir. Önemli katkılarına rağmen derlemelerin daha çok menü analizi alanyazınındaki gelişmeleri belgelediği ve bu yönü ile uygulamacılardan ziyade konuya ilgi duyan akademisyenlere hitap ettiği söylenebilir. Bu nedenle derlemeler uygulamacıların menü analizi ile ilgili yaklaşım ve uygulamalarını göstermekte yetersiz kalmaktadır.
 
Alan Araştırmaları
Menü konusunda uygulamacıların deneyim ve yaklaşımlarını inceleyen görgül araştırma sayısının sınırlı olduğu bilinmektedir. Menü analizi ile ilgili olduğu düşünülen alan araştırmaları ise Chan ve Au (1998); Jones ve Mifli (2001) ve Kwong’un (2005) çalışmaları ile sınırlı kalmaktadır. Bu çalışmalara ulusal yazından Sarıışık ve Özleyen’in (2004) araştırması da eklenebilir.
 
Chan ve Au (1998), Çin’deki restoranlarda görev yapan 75 yönetici ile gerçekleştirdikleri bir araştırmada uygulamacıların menü kalemlerinin kârlılık açısından performansını belirlemek için maliyet bilgisini nasıl kullandıklarını incelemişlerdir. Uygulamacıların kârlılığı daha çok katkı payı (satış fiyatından yiyecek malzeme maliyetinin çıkarılması ile hesaplanan tutar) olarak dikkate almalarından dolayı yiyecek malzeme maliyetinin en fazla önemsenen maliyet kalemi olduğu saptanmıştır. Jones ve Mifli (2001) İngiltere’de yedi farklı restoran zincirinde menü yönetiminin farklı konuları (menü planlama, menü fiyatlama, menü tasarımı ve menü analizi) ile ilgili nitel bir araştırma gerçekleştirmiştir. 
 
Menü analizine ilişkin araştırma bulgularına göre uygulamacıların ağırlıklı olarak brüt kâr, satış miktarı ve maliyet (menü kalemlerinin performanslarını değerlendirmede) ölçütlerini kullandıkları anlaşılmaktadır. Bununla birlikte çalışanlar ve misafirlerden gelen geribildirimler de dikkate alınmaktadır. Jones ve Mifli’nin (2001) elde ettikleri önemli bulgulardan bir diğeri ise menü kalemlerinin performans değerlendirmesi sonrası performansı yetersiz görülen menü kalemleri için uygulanan iyileştirme stratejileri ile ilgilidir. Buna göre iki ana grup stratejiden söz edilebilir. 
 
Bunlar yemekte değişiklik yapma (sunum, fiyat, maliyet ve reçetede değişiklikler) ve menüde değişiklik yapma (promosyon, konumlandırma, alıkoyma, menüden çıkarma) şeklinde belirlenmiştir. Kwong’un (2005) araştırması da menü yönetiminin belli başlı konuları (menü planlama, menü tasarımı ve menü analizi) ile ilgili olmakla birlikte Uzak Doğu Mutfağı sunan üç restoranda gerçekleştirilmiştir. Kwong’un (2005) menü analizi açısından yaptığı önemli bir saptama uygulamacıların ilgili alanyazındaki menü analiz yöntemlerini kullanmadıkları aksine sezgi ve deneyimlerine dayalı nitel değerlendirmelerine göre menüleri analiz ettikleri şeklindedir. 
 
Bir diğer önemli tespit ise performansı düşük bulunan menü kalemleri için menüden çıkarma seçeneğinin en son düşünülen alternatif olduğudur. Sarıışık ve Özleyen (2004) Kocaeli’de faaliyet gösteren yiyecek-içecek işletmelerinde görev yapan 121 yönetici ile yaptıkları bir araştırmada yöneticilerin menü planlama, tasarlama ve analiz konusundaki düşüncelerini incelemişler ve menülerin analizinde dikkate alınan en önemli ölçütün menü kalemlerinin satış miktarı olduğunu saptamışlardır.
 
Menü analizi ile ilgili olarak gerçekleştirilen alan araştırmaları konuyu uygulamacıların gözünden görmek açısından yararlı bulgular sunmuş olsa da eksik kaldıkları yanlar olduğu söylenmelidir. Her şeyden önce bu konuda yapılan araştırma sayısı sınırlıdır. Ayrıca bu araştırmalar konuları açısından da (sadece maliyet unsuruna odaklanma veya menü analizi dışında menü ile ilgili diğer değişkenleri de inceleme) sınırlılık arz etmektedir. Yayın yılları dikkate alındığında güncellikleri de tartışmalı hale gelmektedir. Tüm bu eksiklikler doğrudan uygulamacıların menü analizi ile ilgili görüş, deneyim ve yaklaşımlarına odaklanan güncel bir araştırmaya duyulan ihtiyacı işaret etmektedir.
 
Yöntem
Menü analizi uygulamaları ile ilgili derinlemesine bir inceleme yapabilmek amacıyla bu çalışmada nitel araştırma yaklaşımı benimsenmiştir. Nitel yaklaşım kapsamında veri toplama yöntemi olarak yarı yapılandırılmış görüşme ve veri analiz yöntemi olarak da içerik analizi kullanılmıştır.
 
Örneklem ve Görüşmeler
Nitel araştırmalarda amaçlı örnekleme yönteminin kullanımı sıklıkla tercih edilmektedir (Özdemir 2010). Bu çalışmada da amaçlı örnekleme yöntemi kullanılmıştır. Antalya’nın Alanya ilçesinde faaliyet gösteren ve bünyesinde alakart restoran hizmetinin sunulduğu beş yıldızlı otel işletmeleri çalışma evrenini oluşturmaktadır. 
 
Ancak bazı ölçütleri karşılayan mutfak şefleri örnekleme dahil edilmiştir. Buna göre örneklemde yer alacak mutfak şeflerinin (i) bünyesinde alakart restoran hizmeti sunulan bir otelde görev yapıyor olması, (ii) alakart restoranın menüsünün yönetiminden birinci derecede sorumlu kişi olması ve (iii) deneyimlerini paylaşmaya gönüllü olması gerekir. 
 
Alanya’nın seçilmiş olmasında ilçede çok sayıda beş yıldızlı otel işletmesinin bulunması (Çetinsöz ve Ege 2012) ve bu otellerde alakart restoran hizmetlerinin yaygın olarak sunuluyor olmasının yanı sıra çalışmanın yazarlarından birinin ilçede ikamet ediyor olması ve çalışmaya dahil edilebilecek potansiyel katılımcılarla iletişiminin olması da nedenler arasında yer almaktadır. Böylece potansiyel katılımcılarla ilk aşamada temasa geçmek kolaylaşmıştır.
 
Çalışma kapsamında özellikle otel işletmelerinde alakart restoranlara odaklanılmış olmasının başlıca nedeni bu restoranların otel dışındaki bağımsız restoranlarla benzer ve farklı yönlerinin bulunmasıdır. Belirli bir dönem yürürlükte olan ve çok seçenekli bir yapıya sahip menülerinin olması yönünden bağımsız restoranlarla benzerlik gösterseler de misafirlerinden tükettikleri yiyecek ve içecekler için ücret talep etmiyor olmaları farklı yönleridir. Böylece otellerdeki alakart restoranlar analiz edilebilecek menülerinin olması ve satış fiyatı ile satış hasılatı baskısı olmadan menü analizinin nasıl yapıldığının anlaşılması açısından uygun bir araştırma bağlamı oluşturmaktadır.
 
Görüşmeler yapmak üzere kolayda örnekleme yöntemiyle belirlenen ve çalışmaya katılmayı kabul eden mutfak şeflerinden randevular alınmış, çalıştıkları otellerdeki ofislerinde kendileri ile görüşülmüştür. Bu yolla 12 mutfak şefi örnekleme dahil edilebilmiştir. Bu sayıdaki şefle yapılan görüşmelerde veriler belirli bir doygunluğa ulaştığından (anlatılanlar tekrarlanmaya başladığından) katılımcı sayısı yeterli görülmüştür. 
 
Yurt dışında şeflerin katılımı ile yapılan nitel araştırmalarda da küçük örneklemlerin yeterli kabul edildiği görülmektedir. Söz gelimi Ottenbacher ve Harrington (2007) restoranlarda yenilik süreci üzerine yaptıkları bir araştırmada 12 şefle görüşmüştür. Mevcut çalışmada görüşülen her bir şeften alınan izin ile görüşmeler ses kayıt cihazı ile kayıt altına alınmıştır. Görüşmeler ortalama olarak bir saat sürmüştür. Tablo 1’de araştırmaya katılan şeflerin demografik özellikleri ve iş deneyimlerine ilişkin bilgiler yer almaktadır.
 
Menü Analizi Nasıl Yapılır?
 
Tablo 1’deki bilgilere göre araştırmanın örnekleminde yer alan şeflerin tamamı erkektir, yaşları 30 ile 56 arasında değişmektedir. Şeflerin altısı lise, beşi ilköğretim ve biri de üniversite mezunudur. İş deneyimlerinin süresi ise 12 ile 40 yıl arasındadır. Şu halde araştırma katılımcılarının mesleklerinde deneyimli kişilerden oluştuğu söylenebilir.
 
Soru Formu
Tüm görüşmelerin belli bir ölçüde tutarlılık içerisinde gerçekleşmesine katkı vermek ve menü analizi ile ilgili başlıca konuları atlamamak için görüşmeler sırasında yarı yapılandırılmış soru formu kullanılmıştır. Böylece görüşmelerin ilerleyişine göre ayrıntıları sorgulayan nitelikte ilave soruların da katılımcılara yöneltilmesi ve bu hususlarla ilgili veri toplanabilmesi olanaklı kılınmıştır. 
 
Yarı yapılandırılmış soru formunda temelde iki grup soru yer almaktadır. Formun sonunda yer alan sorular katılımcılara ilişkin demografik bilgileri elde etmeyi amaçlamaktadır. Diğer grup sorularda ise katılımcıların menü analizi ile ilgili deneyim ve görüşlerini almak üzere aşağıdaki hususlara değinilmiştir.
 
• Menü ile ilgili sorumlulukları,
• Menü performansını değerlendirmede dikkat ettikleri hususlar,
• Menü analizine ilişkin yaklaşımları ve Menüde değişiklikleri nasıl yaptıkları.
 
Analiz
Görüşmeler yolu ile toplanan nitel veriler ses kayıt cihazından bilgisayar ortamına aktarılmış ve ardından deşifre edilerek kâğıda dökülmüştür. Böylece içerik analizine tabi tutulacak metinler elde edilmiştir. Ardından bu metinlerin analizine geçilmiştir. Bu aşamada kodlama, kategorileri belirleme, kategorileri isimlendirme ve kategorilere ilişkin özellikleri tanımlama işlemleri gerçekleştirilmiştir. Öncelikle iki araştırmacı aşinalık kazanmak üzere metinleri birkaç defa okumuştur. Bu sırada beliren ilk fikirler not alınmıştır. 
 
İlk okumaların ardından ilgili yazından da destek alınarak metinlerden hareketle bir kod şeması geliştirilmiştir. Daha sonra eldeki kod şeması ile tekrar metinlere dönülmüş ve metinlerdeki içeriklerin ilgili kodlara atanması işlemi gerçekleştirilmiştir. Bu işlem iki araştırmacı tarafından ayrı ayrı yapılmış ve daha sonra bu iki araştırmacı bir araya gelerek elde ettikleri sonuçları karşılaştırmış ve tartışmıştır. Bu tartışmalar içeriklerin atandığı kodlara ilişkin farklılıklar giderilene dek sürdürülmüştür ve nihai olarak bir anlaşmaya varılmıştır.
 
Kodlama sürecinin ardından kategorilerin oluşturulması aşamasına geçilmiştir. Graneheim ve Lundman’a (2004) göre kategori ortak yönleri olan bir grup içerikten oluşmaktadır ve kategoriler alt kategorilere de ayrılabilir ya da alt kategoriler bir araya getirilerek bir kategori oluşturabilir. 
 
Bu çalışmada da bir soyutlama sürecinden yararlanılarak benzer kodların gruplandırılması ile alt kategoriler oluşturulmuş ve aralarındaki benzerliklere göre alt kategorilerin bir araya getirilmesi ile de ana kategoriler ortaya çıkarılmıştır. Bu süreç içerisinde ve sonunda iki araştırmacı arasında kategorilerin oluşumu ve isimlendirilmesi konularında uzlaşma sağlamak üzere tartışmalar gerçekleştirilmiştir. Çalışmada gerçekleştirilen içerik analizi burada her ne kadar doğrusal bir süreç gibi anlatılmış olsa da aslında bu analiz geri dönüşleri ve tekrarları içeren bir süreç halinde ilerlemiştir.
 
Araştırmacıların içerik analizinin güvenirliği (trustworthiness) ile ilgili hususları da göz ardı etmemeleri gerekir. Graneheim ve Lundman (2004), Elo ve Kyngas (2007) ve Hsich ve Shannon (2005) araştırmacıların yaptıkları içerik analizinin güvenilirliğini birkaç yolla gösterebileceklerini belirtmektedir. Bunların ilki araştırma ve analiz süreci ile ilgili ayrıntılı bilgi vermektir. Böylece okuyucu araştırmanın tam olarak hangi aşamalarda nasıl gerçekleştiğini anlayabilir. Bu nedenle bu çalışmada da araştırma yöntemine ilişkin mümkün olduğu ölçüde ayrıntılı bilgi verilmeye çalışılmıştır.
 
 Güvenilirliği göstermenin bir diğer yolu veriler ile bulgular arasındaki bağlantıları göstermek için analiz edilen metinden doğrudan alıntılar vermektir. Bu çalışmada da bulguların sunumunda katılımcıların sözlerinden doğrudan alıntılar her bir bulgu ile ilişkilendirilerek verilmiştir. 
 
İçerik analizinde kodlama da güvenirlik açısından kritik rol oynayan bir işlemdir. Hall ve Valentin (2005) güvenirliği temin etmek için kodlamanın en az iki farklı kodlayıcı tarafından yapılması gerektiğine işaret etmektedir. Bu yüzden bu çalışmada iki araştırmacı kodlamayı ayrı ayrı yapmıştır. 
 
Diğer taraftan analizi gerçekleştiren araştırmacılar arasında kod şemasının geliştirilmesi, kod şemasının metne uygulanması ve kategorilerin belirlenmesi sırasında tartışmalar yapılması ve uzlaşma arayışı da güvenilirliğe katkı vermektedir (Graneheim ve Lundman 2004). Nihai olarak araştırmaya katılanlardan, araştırmanın bulguları konusunda görüş alınması da güvenilirliği arttırmaktadır. 
 
Bu doğrultuda bu çalışmada kendileri ile görüşülen şeflerden altısına tekrar ulaşılmış, araştırma sonucu elde edilen bulgular kendilerine anlatılmış ve görüşleri sorulmuştur. Bu süreç sonunda görüşü alınan şefler araştırma bulgularının kendi düşünce ve deneyimlerini yansıttığını belirtmişlerdir.
 
Bulgular Ve Tartışma
Bu araştırma ile elde edilen bulgular Tablo 2’de sunulmaktadır. Tabloda gösterildiği gibi örneklem dahilindeki otel işletmelerinin alakart restoranlarında menü analizinin kavramsal yapısı beş adet ana kategori ile on adet alt kategoriden oluşmaktadır. Tablo 2’de her bir alt kategoriye ilişkin tanımlamalar da verilmiştir. Ancak bu tanımlar, ilgili alt kategorinin biçimsel tanımlamaları şeklinde değildir. Daha çok mutfak şeflerinin ilgili kavrama ilişkin görüşlerini yansıtmaktadır. Aşağıda her bir ana kategori alt kategorileri ile birlikte ve ilgili alıntılara da yer verilerek açıklanmaktadır.
 
Menü Analizi Nasıl Yapılır?Otel işletmelerinin alakart restoranlarında menü analizi konusu ile ilgili ana kategorilerden ilki, şeflerin menülerde değişiklik yapma ihtiyacıdır. Bu ana kategori kapsamındaki iki alt kategori menüde yapılacak değişikliğin ortaya çıkma zamanına göre sezon başı ve sezon içi olarak adlandırılmıştır. Takip eden alıntıda K3 kodlu katılımcının sezon başında bir önceki sezon menüsünü gözden geçirirken yeni sezonun menüsü için yapabileceği değişiklikleri düşündüğü görülmektedir:
 
“Sezon başında biz menü çalışması yaparken önce bir önceki sene hangi menüyü uygulamışız, bu sene menülerden neleri değiştireceğiz; ana yemek, ara sıcak, başlangıçlar vs. onları tespit edip çalışmaları yapıp...”
 
K11 kodlu katılımcıdan yapılan alıntı da bu açıklamalarla paralellik göstermektedir:
 
“Menüler dönem dönem değişir... Her sezon başında revize edilir.”
 
K2 kodlu katılımcı da sezon başında menüde değişiklik yapmaya neden ihtiyaç duyduğunu şu şekilde açıklamaktadır:
“Misafir her sene aynı menüyü görürse bıkar. Yani hep yenilik, daha iyi neler yapabiliriz, pastanede olsun, ana yemeklerde olsun, sıcaklarda olsun...”
 
K9 kodlu katılımcı ise sezon içinde hangi hallerde menüde değişiklik yapma ihtiyacının doğduğunu aşağıdaki alıntıda anlatmaktadır:
 
“Çünkü burada misafirler sürekli değiştiği için, alakart restoranımızın menülerini de çok fazla böyle hani bir talep gelmeyince ve şikâyet bölümünden... Çok fazla değiştirmiyoruz... Yani sezon başında menüyü oluşturduk, dört tane ana yemeği, iki tane ara sıcağı, antresi, başlangıcı vs. Çok bariz böyle şikâyet falan gelmediği sürece oradan devam ediyoruz.”
 
Menü Analizi Nasıl Yapılır?
 
Araştırmanın bulguları şeflerin menü analizi yapma ihtiyacını daha çok menüde değişiklik yapacakları dönemlerde hissettiğini göstermektedir. Morrison’un (1997) rapor ettiği ve 21 restoranın menü planlamasından sorumlu yöneticileri (16’sı şef, 5’i restoran müdürü ya da sahibi) ile yapılan bir araştırmada menülerde üç ya da altı aylık dönemlerde değişiklik yapıldığı ve bu değişikliklerin de menü analizlerini gerekli kıldığı belirtilmektedir. 
 
Şu halde gerek önceki araştırmalar gerekse mevcut çalışmanın bulguları menüde değişiklik yapma ihtiyacının menüyü analiz etme ihtiyacını belirleyen önemli faktörlerden biri olduğunu göstermektedir. Bu çalışma kapsamındaki şefler bu ihtiyacı dönemsel olarak sezon başlarında hissetmekte, ancak misafirlerden gelen talepler ya da şikâyetlere göre menüdeki yemeklerin performansı sezon içerisinde de gözden geçirilerek gerek duyulursa menüde değişiklikler yapılabilmektedir. Şu halde araştırmaya katılan şeflerin menü analizi yapmaya açık oldukları, dönemsel olarak (sezonluk) bu analizleri yaptıkları ve ihtiyaca göre analiz dönemleri dışında da (sezon içi) menü analizi yapabildikleri anlaşılmaktadır.
 
Tablo 2’de yer alan bulgulara göre katılımcıların menüleri analiz etmede maliyet ve misafir memnuniyeti olmak üzere iki ana ölçütü dikkate aldıkları anlaşılmaktadır. Şefler bir menü kaleminin maliyetinin o menü kaleminin hazırlama kolaylığı ve malzemelerinin bulunabilirliği şeklindeki iki faktörün etkisiyle şekillendiğini düşünmektedir. Bu bağlamda, K7 kodlu katılımcının sözleri hazırlama kolaylığının alakart restoranlarda ne kadar önemli olduğu ile ilgili fikir vermektedir:
 
“Alakartta biz şunu tercih ederiz. Mesela, çabuk pişirilme özelliği seçilmeli. Her yemeğin saatlerce pişmesini bekleyecek bir alakart yok... Lezzetinden eminsin, mutlaka yiyen beğenecek ama hazırlanması uzun zaman alıyorsa onu otomatikman eleyebiliyorsun.”
 
K5 kodlu katılımcı ise bir menü kaleminin üretilmesi için gerekli olan malzemelerin bulunabilirliğinin yiyecek maliyetine etkisini şu ifadelerle açıkça ortaya koymaktadır:
 
“Benim bu sene Çin restoranımda aşçım Çinli. Ama tüm misafirlerden almış olduğum tek benim bir şikâyet konusu vardı. Yemekler Çin yemeği değil. Çünkü kullandığın malzeme Türk malzemesi. Soya sosu kullanıyorsun Türkiye’de yapılan imal edilen. Eee... Sen Avrupa’dan özür dilerim Asya’dan ithal edersen inanılmaz derecede maliyet boyutu var.”
 
Benzer bir ilişki K4 kodlu katılımcının sözlerinde de görülebilmektedir:
 
“Ben hazırlıyorum, genel müdürümün onayına sunuyorum. Tabi ki bunların maliyetini hazırlayarak sunuyoruz. Burada malzemenin akışı son derece önemli, yani bizim ham maddemiz olan malzemeyi bulup tesise sağlamamız önemli.”
 
Menü kalemlerinin performansının maliyet yönünden değerlendirilmesinde otel işletmesinin belirlemiş olduğu yiyecek malzeme maliyeti hedefi de dikkate alınan önemli bir faktör olmaktadır. K9 kodlu katılımcının takip eden ifadeleri bu konuda ipucu vermektedir:
 
“Bugün benim mutfak costum kaçtır; 7,20’dir. Ben ne kullanmışım bu ay iki ton et kullanmışım, 500 kilo kaşar kullanmışım vs. vs. Bu cost departmanı tarafından komple girdiler çıktılar yapılıp sayım yapıldıktan sonra, bir de oteldeki misafir sayısı belli zaten, konaklama onların bölünüp çarpımında ortaya çıkar.”
 
Katılımcılar şikâyet sayısı ve tüketilme düzeylerine bakarak misafirlerin menü kalemleri ile ilgili memnuniyetlerini anlamaya çalışmakta ve bu yolla misafir memnuniyetini menü performansını değerlendirmede önemli bir ölçüt olarak analize dahil etmektedir. K1 kodlu katılımcı sorumlu olduğu bir alakart restoranın menüsündeki yemeklere ilişkin herhangi bir şikâyet alıp almama durumuna göre menü kalemlerini nasıl değerlendirdiğini şu alıntıda anlatmaktadır:
 
“Menü planlaması misafirlerden gelen feedback ile doğru orantılıdır... Yine Akdeniz (oteldeki bir alakart restoranın adı) örneğini vereceğim. Yıllardır Akdeniz’den hiç şikâyet almadık biz. Hem başlangıçlarda, aperatiflerde bir olumsuzluk almadık, ana yemeklerde desertte de almadık. Dolayısıyla devam ettiriyoruz.”
 
K5 kodlu katılımcı ise şikâyet sayısının büyüklüğüne dikkat çekmektedir.
 
“Bir kişiye bağlı değiliz biz. Bizim amacımız binler, on binlerin yüzdesini yakalamak. Yoksa bin kişi beğenmiş bir kişi beğenmemiş çok önemli değil.”
Bazı şeflerin daha biçimsel bir yöntem kullanarak menü kalemlerinin tüketilme düzeyini izlediği K6 kodlu katılımcının takip eden ifadelerinden anlaşılmaktadır.
 
“Mesela, alakartın kapasitesi kaç kişilik? Atıyorum 40 kişi bugün rezervasyon yapmış değil mi? Bu 40 kişiyi bir haftalık boyunca izlemeye alıyorum. Ana yemeğimiz beş çeşit. Bu beş çeşit yemekten hangisi en fazla tüketilmiş? Bir grafik hazırlıyoruz. Az tüketilenleri nedir? Onu araştırıyoruz... Bu neden az tüketildi? Misafir istiyor da yemiyor mu yoksa misafir hiç mi istemiyor? Buna göre çalışma yapıyoruz”
 
K7 kodlu katılımcı ise menü kaleminin performansını tüketilme düzeyi ölçütüne göre sayısal bir hedefi dikkate alarak değerlendirdiğini şu sözlerle açıklamaktadır:
 
“Yüzde 10’larda ise tercih edilme düzeyi daha fazla tercih edilebilecek bir yemeği de koymaya çalışıyoruz. Tercihe bakıyoruz yani.”
Bulgular göstermektedir ki araştırmaya katılan mutfak şefleri bir maliyet hedefini tutturmak zorunda olduklarını bilmektedirler. Otel işletmelerinde bütçeler de bu maliyet hedeflerinin belirlendiği ve özellikle yıllık satış, maliyet ve kârlılık tahminlerinin yer aldığı çalışmalardır. 
 
Gerek ulusal (Uyar ve Bilgin 2011) gerek uluslararası (Jones 2008) yazında otellerde bütçenin maliyet hedeflerini belirleme ve maliyetleri kontrol etmede önemli bir araç olarak kullanıldığına ilişkin araştırma bulguları mevcuttur. Şu halde, araştırma kapsamındaki şefler için bütçe ile belirlenen maliyet hedefini tutturmak üzere menü kalemlerinin performansını maliyet yönünden değerlendirme ihtiyacı kendini hissettirmektedir. 
 
Bu nedenle de şeflerin özellikle menü kalemlerinin hazırlama kolaylığı ve üretimlerinde kullanılan malzemelerin bulunabilirliği şeklinde iki faktörü dikkate aldığı söylenebilir. Diğer taraftan şefler misafir memnuniyetine özel bir ilgi göstermekte ve misafir memnuniyeti menüdeki yemeklerin tüketilme düzeyi ve bunlarla ilgili alınan şikâyet sayıları üzerinden izlenmektedir. 
 
Burada dikkat çeken husus ise menü analizi alanyazınında menü kalemlerinin performansının analizinde ağırlıklı olarak satış miktarı, satış geliri, maliyet ve kârlılık gibi finansal yönlü göstergelerin kullanılmasına (Özdemir 2012) karşın misafir memnuniyeti gibi çok önemli görülen fakat sayısallaştırılmasının güçlüğü nedeni ile geliştirilen modellere dahil edilmemiş olan bir nitel değişkenin (Saura vd. 2008) bu araştırmanın katılımcısı şefler tarafından analizlerde kullanılmasıdır.
 
Tablo 3’teki bulgulara göre katılımcıların menü kalemlerinin performansına ilişkin veri toplama bağlamında başvurdukları yöntemlerin tabaktaki artıkları gözlemleme ve geribildirim alma ve değerlendirme olduğu saptanmıştır. Tüketim sonrası misafir masasından gelen tabakların kontrol edilmesi şefler tarafından misafirin bir yemeği ne kadar tükettiği ve dolayısıyla o yemeği ne kadar beğendiğinin anlaşılmasının bir yolu olarak görülebilmektedir. K1 kodlu katılımcıdan yapılan alıntı hem tabakların kontrolünün nasıl yapıldığını hem de bu kontrolün yemeğin tüketilme düzeyi ile ilişkisini ortaya koymaktadır:
 
“Garsonlar boşları aldıktan sonra, orada bir bar deski var, bulaşıkhanenin yanında, oraya bırakıyorlar. Kaptan ya da head waiter not alıyorlar. İşte şu yenildi bu tabağın içinde başlangıçta bu yenildi, bu yenilmedi. Hatta fotoğraflıyoruz bunu, sonra bundan analiz yapıyoruz. Diyoruz ki evet bunu koymamamız gerekiyor. Çünkü 200 misafirden sadece 20’si yemiş o da yarısını yemiş.”
 
K3 kodlu katılımcının aşağıda sunulan ifadeleri de bu açıklamaları destekler niteliktedir:
 
“Genelde biz misafir yemekten kalktıktan sonra veya garson masadaki boşları toplarken tabaklara bakarız. Eğer yemekler tabakta çoksa orada bir sıkıntı var, yani yemiyorsa, ama genelde tabaklar boşsa temizlenmişse bir sıkıntı yoktur yani.”
 
Katılımcılar menü kalemlerinin performansına ilişkin veri toplamak üzere misafirleri çok önemli bir geribildirim kaynağı olarak görmektedir. Özellikle menü kalemlerinin misafir memnuniyeti ile ilişkisini anlayabilmek için şikâyetleri dinleme, yüz yüze görüşme ve/veya anket uygulama yöntemleri ile sürekli olarak misafirlerden geribildirimler ve öneriler almaktadırlar. Bu geribildirim ve önerileri de menüleri analiz etmede kullanma davranışı gösterdikleri anlaşılmaktadır. Aşağıda sırasıyla sunulan K1 ve K2 kodlu katılımcılardan yapılan alıntılar bu hususları vurgulamaktadır:
 
“Unuttuğumuz çoğu şeyi bize misafirlerimiz hatırlatıyor. Ana yemekte misafir eleştiriyor. Çok güzel ama sulu değil diyebiliyor. Ama bunu biz sadece bir misafirin demesiyle yapmıyoruz. Onu biriktiriyoruz, misafir sayısı şikâyet sayısı hangi kalemde fazla ise onu değerlendiriyoruz.”
 
“Bizde şöyle beş-altı tane halkla ilişkiler var. Birebir günün akşamına kadar misafirlere sorarlar. Yani neyi beğenmiyorsun?... Alakart restorana gittin yemeği mi beğenmedin, çorbayı mı beğenmedin, soğuk mu, sıcak mı, tadını mı beğenmedin? Yani bütün halkla ilişkiler bunlarla akşama kadar dolanırlar, gezerler bütün misafirleri, bunların görevleri odur. Bunlar bize şikâyetleri getirirler... Her gün biz anket okuruz misafirden günlük bize anket gelir, her sabah bir saat rutindir... Bugün mutfaktan 100 tane geldi, üç tane yemek soğuk diyor ve ya mesela kırmızı et daha fazla olsun veya beyaz et daha fazla olsun diyor.”
 
Bu araştırmaya katılan şeflerin menüleri analiz etmede misafir memnuniyetini anlamaya odaklı nitel yöntemleri kullanma eğiliminde oldukları anlaşılmaktadır. Bu husus Kwong’un (2005) menüden sorumlu yöneticilerin ilgili yazının önerdiği biçimsel menü analiz yöntemlerini kullanmadıkları yönündeki bulgusu ile de tutarlılık göstermektedir. Bu çalışmada tabaktaki artıkların gözlemlenmesi ile ilgili olarak elde edilen bulgu da mevcut alanyazın açısından tartışılmaya değer görülmektedir. 
 
Hastane işletmeciliği yazınında kendisine yer bulan ancak turizm işletmeciliği ya da restoran işletmeciliği alanındaki araştırmacıların akademik açıdan ilgi göstermedikleri ve hatta menü analizi ile ilgili derleme çalışmalarında dahi atıf yapılmamış olan tabaktaki artıkların gözlemlenmesine dayalı menü analiz yöntemi katılımcı şeflerin itibar ettikleri bir yöntem olarak tespit edilmiştir. 
 
Bu konuyla ilgili yapılan iki araştırma bulunmaktadır ve bunlar hastanelerde gerçekleştirilmiştir. Söz gelimi Connors ve Rozell (2004) hastalardan gelen tabaklardaki artık miktarının izlenmesi ve analizi ile yüksek ve düşük düzeyde tüketilen yemeklerin belirlenebileceğini ve bu yolla menü kalemlerinin performans kıyaslamalarının yapılabileceğini ve menüde değişikliklerin planlanabileceğini belirtmektedir. 
 
Kandiah vd. (2006) ise tabaktaki artık oranının kalan yiyeceğin miktarı ya da yüzdesi şeklinde belirlenebileceğini; bunun için de görsel inceleme sonucu bir tahmin yapılarak, tabak tartılarak ya da fotoğrafı çekilerek bir tespit yapılabileceğini ifade etmektedir. Mevcut araştırmaya katılan şeflerin bu iki araştırmayla ilgili bilgi sahibi olup olmadıkları sorgulanmamış olsa da sundukları yemeklerden misafirlerin memnun olup olmadığını anlamak için deneyim ve sezgilerinin de yönlendirmesi ile servis sonrası tabaklardaki artıkları gözlemledikleri sonucu çıkarılabilir. 
 
Teorik açıdan ise ilgili alanyazında hastaneler için geliştirilmiş bir menü analiz yönteminin hâlihazırda otel işletmelerinde kullanılıyor olması turizm ve restoran işletmeciliği alanında menü analizi ile ilgilenen araştırmacıların da konuya ilgisinin çekilmesinde yararlı olabilir.
 
Katılımcılar belirledikleri ölçütler doğrultusunda kullandıkları yöntemler ile menüleri analiz ettikten sonra performansını düşük buldukları menü kalemleri için iki ana iyileştirme stratejisinden birini uygulayabilmektedir. Bu stratejiler revizyon yapma ve menüden çıkarma olabilmektedir. Aşağıda
K12 kodlu katılımcıdan yapılan alıntıda da belirtildiği gibi bazı şefler revizyon yapmayı menüden çıkarma alternatifine göre daha fazla tercih edebilirler:
 
“Çok sık değişiklik yapmam. Menü kalemini tamamen ortadan kaldırmaktansa küçük revizyonlar yaparak değişikliğe giderim... Misafir tepkisine göre...”
Şefler menü kalemlerinde revizyon yaparken yemeğin sunumunu ya da reçetesini değiştirebilmektedir. K6 ve K7 kodlu katılımcılar bu değişiklikleri nasıl yaptıkları ile ilgili deneyimlerini aşağıdaki alıntılarda aktarmaktadır:
 
“Bizim Sezar salatası adında bir meşhur İtalyan salatası vardı menüde... Ama belirli misafirlerimizde tepkiler oldu. Mesela dediler ki Sezar salatada şu şu da olmalıdır... Biz de orada ne yapıyoruz Sezar salatasında misafirle ikileme düşmektense birtakım ürünlerde değişikliğe gidiyoruz.”
 
“Sunumlarında değişiklik yapabiliyoruz. Ama sonradan hoşumuza gitmemiştir, değiştirip aynı ürünleri farklı sunum olarak yapabiliriz.”
 
Şefler performansını yetersiz buldukları (özellikle misafir memnuniyeti açısından) bir menü kalemini menüden çıkarma yoluna da başvurabilmektedirler. Böylece performansı yetersiz olan yemek menüden çıkarılmakta, ancak yerine daha iyi performans göstereceğine inanılan bir başka yemek konmaktadır. K6 kodlu katılımcının aşağıdaki ifadeleri de bu hususu desteklemektedir:
 
“Beş çeşit ana yemekten bir tanesi hiç hareket etmemişse ya da şikâyet almışsa onu hemen menü grubundan çıkarıp, onun yerine başka bir ürün yine aynı gruptan beyaz etse beyaz, kırmızı etse kırmızı et grubundan, balıksa balık grubundan, tavuksa tavuk grubundan...”,
 
İlgili alanyazında Jones ve Mifli (2001) ve Kwong (2005) tarafından yemeklerin fiyatları, maliyetleri ve satış miktarlarında değişiklik gerektiren çok sayıda stratejinin önerildiği bilinmektedir. Şu halde katılımcı şefler yazındaki önerilere göre daha az sayıda stratejiden yararlanmaktadır. Ancak vurgulanması gereken bir diğer nokta şeflerin düşük performanslı yemeklerin menüden çıkarılmasını öncelikli seçenek olarak ele almamış olmalarıdır. Benzer bir bulgu Kwong’un (2005) çalışması ile de ortaya konmuştur. Bu durumda menüde revizyon yapma daha öncelikli bir iyileştirme stratejisi olarak değerlendirilmektedir.
 
Katılımcılar menülerini yönetmekle sorumlu oldukları alakart restoranların iki önemli özelliğin den söz etmektedirler. Bunlardan ilki otelin ana restoranı niteliğindeki açık büfe restoranından farklı olarak alakart restoranlarda masa servisinin sunuluyor olmasıdır. Şeflere göre masa servisi ile misafirler alakart restoranlarda kişiselleştirilmiş hizmet aldıkları yönünde bir duygu yaşamaktadır ve bu da onların bu restoranlarda yaşadıkları deneyimden kaynaklanan memnuniyetleri ile ilişkilendirilebilir. Aşağıda sunulan K1 kodlu katılımcıdan yapılan alıntı da bunu göstermektedir:
 
“Alakartın diğer farkı misafire tamamen hiç masadan kalkmadan ayağına servis yapılması her şeyin. Alakart restoranda misafir geliyor oturuyor, kendini biraz daha özel hissediyor, kendine biraz daha kişiye özel hizmet ediliyor, kişiye özel servis yapılıyor. Oradaki ambiyans, ortam da güzelse misafir kendini biraz daha özel hissediyor, kendine özel hizmet yapılmış hissediyor ve daha mutlu oluyor.”
 
Alakart restoranların şefler tarafından özellikle menü ile de bağlantılı olarak önemli görülen bir diğer özelliği ise misafirlerin bu restoranlardan sınırlı olarak yararlanabilmeleridir. K8 kodlu katılımcı sınırlı kullanım hakkıyla ilgili olarak şu ifadeleri kullanmaktadır:
 
“Otellerde her gelen misafire bir günlük bir menü veriliyor. Misafir eğer o hakkını kullanmak istiyorsa sadece bir kere o menüden kullanıyor. Dolayısıyla o misafir ikinci kere gelmediği için o yemeği bir kere yemiş oluyor.”
 
Alakart restoranların özellikleri şeflerin menü analizi yaklaşımları üzerinde etkili olabilmektedir. Misafirlerin sınırlı kullanım hakkı olması nedeniyle genellikle sezon içerisinde bir misafir bir kez alakart restoranda yemek yeme şansına sahip olabilmektedir. Bu nedenle misafirlerin tekrarlı olarak aynı menüye maruz kalmaları pek rastlanan bir durum değildir. 
 
Böylece sezon içinde şikâyet alınması dışında söz gelimi menü yorgunluğu nedeniyle menüde değişiklik yapma ihtiyacı çok fazla hissedilmemektedir. Diğer taraftan hem sınırlı kullanım hem de masa servisi özellikleri nedeniyle alakart restoranlarda yemek yiyen misafirlerin kendilerini özel hissettikleri ve bu nedenle memnun edilmelerinin önemli hale geldiği düşünülmektedir. Bu son husus şeflerin alakart restoranlarda misafir memnuniyetine yüksek düzeyde önem atfetmesinin önemli bir nedeni olarak da görülebilir.
 
Sonuç
Bu çalışma mutfak şeflerinin otel işletmelerinin alakart restoranlarında menü analizi ile ilgili görüş, deneyim ve uygulamalarını tespit etmek ve uygulamada menü analizinin kavramsal yapısına ilişkin bulgular elde etmek amacıyla gerçekleştirilmiştir. Araştırmanın başlıca bulgularına göre şefler sezon başında ve içerisinde menüde değişiklik yapma ihtiyacının ortaya çıkması ile alakart restoranların menülerini analiz etmektedir. Bu analizde maliyet ve misafir memnuniyeti iki ana ölçüt olarak dikkate alınsa da misafir memnuniyetinin daha öncelikli olduğu anlaşılmaktadır. 
 
Şefler tabaktaki artıkları gözlemleyerek ve misafirlerden sürekli geribildirimler alarak menüdeki yemeklerin performansını değerlendirmektedir. Bu değerlendirmelerine göre performansını yetersiz buldukları yemekleri menüden çıkarma ya da bu yemeklerin sunumlarında veya reçetelerinde değişiklik yapma yoluyla menü performansını iyileştirmektedir. Alakart restoranların özellikleri de (masa servisi ve sınırlı kullanım hakkı) şeflerin menü analizi ile ilgili yaklaşımlarında etkili olabilmektedir.
 
Şeflerin her bir menü kalemini belirli performans ölçütleri açısından tek tek ele alıp incelediği, her biri için düzenli olarak ayrı ayrı veri toplayıp bu verileri bir nicel model içerisinde birleştirerek analiz ettiği ve bu analizlere dayalı bir performans değerlendirmesi yaptığı söylenemez. Daha kısa bir ifade ile katılımcı şefler menü analizine ilişkin biçimsel bir yaklaşım sergilememektedir. 
 
Bunun yerine önemsedikleri ölçütler (misafir memnuniyeti ve maliyet) üzerinden kendilerine ulaşan (şikâyetler, anketler veya öneriler yolu ile) veya kendilerinin çok sistematik olmayan biçimde (tabakları gözlemleme gibi) topladıkları verileri değerlendirdikleri ve böylece performansı yetersiz olan menü kalemlerini belirledikleri anlaşılmaktadır. Tüm bunları yaparken de deneyim ve sezgilerine güvenmektedirler. 
 
Şeflerin alanyazındaki nicel modellerin analize dahil edemediği misafir memnuniyeti değişkenini dikkate alabilen bir yaklaşıma sahip oldukları da dikkat çeken bir diğer husustur. Bu değerlendirmeler hem şefler hem de araştırmacılar için birtakım öneriler sunulmasına olanak tanımaktadır.
 
Şefler daha biçimsel analiz yöntemlerini kullanmak için kendilerini eğitmeyi düşünebilirler. Ancak bunu yaparken var olan menü analiz yaklaşımlarını tamamen terk etmeleri de düşünülme melidir. Bunun yerine uygulamakta oldukları nitel yaklaşımı alanyazının önerdiği nicel modellerle tamamlayabilirler. 
 
Böylece hem kendi deneyim ve sezgilerine, hem uygulamakta oldukları biçimsel olmayan (ancak nitel ölçütleri dikkate alan) yöntemlere hem de biçimsel yöntemlere (nicel verileri sistematik olarak toplamayı ve analiz etmeyi gerektiren) dayalı karma bir yaklaşım geliştirebilirler. Bu konuda bir otel bünyesinde bulunmanın avantajından da yaralanabilirler. 
 
Sözgelimi muhasebefinansman yöneticileri ve yiyecek-içecek müdürleri gibi finansal değişkenlere ve analizlere daha yatkın olan yöneticilerden de destek alabilirler. Ayrıca şeflerin alanyazındaki modellerle ilgili eğitime tabi tutulmaları da geliştirecekleri menü analiz yaklaşımı için kendilerine yardımcı olabilir.
 
Bu araştırmanın bulguları göstermiştir ki turizm ve restoran işletmeciliği alanındaki araştırmacıların alanyazındaki modellerin eksiklerini tespit edip bu eksiklikleri giderecek yeni modeller üzerinde çalışmak kadar uygulamacıların ihtiyaçlarını dikkate alan modellere yönelmeleri de gerekmektedir. Bunun için uygulamacıların ihtiyaçlarını belirleyen, yaptıkları uygulamaları inceleyen ve hangi performans ölçütlerini değerlendirmek istediklerini tespit eden araştırmaların sayısında artış sağlanmalıdır. 
 
Bu araştırmaların bulgularından hareketle uygulamacıların ihtiyaçlarına odaklı bilimsel ve sistematik model önerileri üzerinde çalışılmalıdır. Bu bağlamda, söz gelimi tabaktaki artıkların gözlemlenmesi sadece hastaneler bünyesinde kullanılabilecek bir yöntem olarak kalmamalıdır. Otel ve restoran işletmeciliği alanına nasıl uyarlanacağı yönünde çalışmalar yapılmalıdır.
 
Bu araştırmanın özellikle nitel araştırma yaklaşımının kullanılmasından kaynaklı birtakım sınırlılıkları bulunmaktadır. Nitel yaklaşım çerçevesinde amaçlı örnekleme yönteminin kullanılmış olması elde edilen bulguların genellenmesini olanaksız kılmaktadır. Ancak bu çalışma ileride uygulamacıların menü analizi konusundaki ihtiyaç ve yaklaşımları ile ilgili yapılacak çalışmalar için bir ilk adım niteliği taşıyabilir ve bu özelliği ile en azından araştırılması gereken temel kavramlar konusunda yönlendirici olabilir. 
 
İçerik analizi ile incelenen metinler çoğu zaman çok sayıda anlamı olabilen içeriklerden oluşmaktadır ve bu içeriklerin analizi araştırmacının geçmiş deneyimlerinden ve nitel araştırma konusundaki becerilerinden etkilenebilmektedir. Bu nedenle bu araştırmada içerik analizi iki araştırmacı tarafından gerçekleştirilmiş ve analiz sürecinin hemen her aşamasında tartışmalar yapılarak uzlaşma arayışı içerisinde olunmuştur. 
 
Çalışmanın önemli kısıtlarından bir diğeri de elde edilen bulguların (beş ana kategori ve on alt kategori) otel işletmelerinde alakart restoranların menülerinin analizinde gerçekte var olan tüm kategorileri yansıtmayabileceği yönündedir. Araştırmaya alakart restoranların menülerinden sorumlu kişiler olarak sadece şefler dahil edilmiştir. 
 
Şefler yerine menü ile ilgili sorumluluğu olan başkaca yöneticiler (genel müdürler, yiyecek-içecek müdürleri veya restoran şefleri) ile görüşmeler yapılması durumunda elde edilen bulgularda farklılık olup olmayacağı bilinmemektedir. Bu nedenle ileriki araştırmalarda örneklemin menü ile ilgili sorumluluğu olan farklı yöneticileri de kapsayacak şekilde genişletilmesi yararlı sonuçlar doğuracaktır.

How is Menu Analysis Done in Practice? The Views of the Kitchen Chiefs of Five Star Hotels
 
Introduction
Menu analysis is accepted as one of the most important intervals of menu management (… zdemir and ‚alÝßkan 2013). The content of menu analysis consists of two basic dimensions. The performance of each menu item in the menu as a country is evaluated in terms of performance indicators determined by the management (‚alÝßkan and… zdemir 2011). Subsequently, improvement exercises are carried out for menu items that perform below expectations (Jones and Mifli 2001).
 
From an academic perspective, the number of academic studies on methods that managers can use to develop high-performance menus has increased in the last 30 years, together with the understanding of the importance of the menus for food and beverage businesses. In this context, the menu analysis paper has shown both the increase in the number of suggested alternative menu analysis approaches and significant developments in methodological networks. However, almost all of these developments are due to foreign literature.
 
In the article of Turk, there is a small number of studies on the menu analysis (RÝzaoÛlu 1991; BšlŸkoÛlu 2000; BšlŸkoÛlu and TŸrksoy 2001; SarÝÝßÝk and Kaya 2004; Koßan and Ge day 2013), and they are considered to be overwhelmed by the foreigners.
 
A major shortcoming in the menu analysis literature is that the links of the models developed with the needs of practitioners (such as restaurant managers, caterers or kitchen chiefs) have not been demonstrated in concrete form. The starting point of the models proposed as a solution to the problem of analyzing the menus of the practitioners is not the needs in the application but the deficiencies in the literature. This is an important factor that weakens practitioners with the menu analysis models in the literature.
 
Few studies examining the views, approaches and practices of practitioners have reached conclusions that support these explanations and show that practitioners do not use the methods recommended by the literature (Kwong 2005). In this case, it cannot be said that we know very well what the practitioners really need or what kind of approach they adopt in determining the menu performance. For this reason, it is also developing simple and effective methods of menu analysis that can meet the needs of practitioners.
 
The aim of the practice in this phase is to examine the approaches of the practitioners (chiefs of hotel kitchens) to menu analysis in depth within the scope of qualitative research design. Thus, a conceptual structure related to the situation of menu analysis in practice can be revealed. Such a conceptual structure can be a first step for new models to be developed about menu analysis, as well as a reference for researchers and practitioners in evaluating and improving the effectiveness of existing models.
 
Literature Review
In this study, a grouping was made as below, taking into account the general principles and methods of previous studies in the literature, and the relevant article was examined in this phase. Thus, instead of classifying the suggested menu analysis models and determining their deficiencies, it became possible to group the studies in the literature and to identify the missing points of each group's reception.
 
Adaptations
In terms of the number of exercises performed, the menu analysis constitutes the largest group of adaptations in the literature. The common point of these practices is that some models developed earlier in areas such as accounting, financing, strategic management and performance management have been adapted to the area of ??origin to analyze the performance of the menu items. The first systematic models in this context are menu analysis methods based on matrices. In the creation of these matrices, the cost of food material, liking (sales amount) or contribution share of the menu items were taken into consideration and different matrices were developed according to the performance indicators used.
 
The best known of these are the models in the work of Miller (1980), Kasavana and Smith (1982) and Pavesic (1983). The common feature of these models is that they constitute the form of portfolio analysis, which was previously used in marketing and strategic management, adapted to the analysis of menus (Cohen et al. 2006). In the following years Hayes and Huffman (1995) and Bayou and Bennett (1992) suggested that not all costs were taken into account in matrix-based models and therefore the fractures of the menu items could not be calculated correctly, and they were forged analysis of the menu items. However, these models do not bring a completely new and specific approach to menu analysis, and they use the concepts of cost and profit established in accounting. In international literature, in the last decade, two main directions have started to be felt within the adaptation group. These;
 
To be able to determine the costs and the price accurately and include them in the matrix model (activity-based costing method)
Ability to calculate the relative efficiency of menu items by including a large number of variables in the menu analysis (data envelopment analysis)
A group of researchers adapts to the forward analysis of the activity-based costing (FTM) method, which has been developed in the accounting field, to be able to determine the costs for each of the menu items completely and accurately, and thus to calculate the fractures of the menu items more accurately. First of all, they showed that FTM can be applied in the field of restaurant management, then Raab et al. (2006) method has adapted the menu items to the performance evaluation. While doing this adaptation, the matrix created with FTM was compared with the traditional matrix model (origin engineering) and it was concluded that the model using FTM produced more accurate results.
 
A group of researchers also suggest the use of data envelopment analysis (DEA) in menu analysis. Accordingly, it is possible to calculate a productivity score for each menu item in the menu by adding a lot of variables to the menu analysis and to compare the items in the menu with each other according to this score. At this stage, first of all, Reynolds (2004) showed that DEA, which was developed in the field of performance management, is a method that can be used in the performance evaluation of restaurant businesses. While doing this, a large number of inputs and output variables (Output variables: Sales, tips, spindle turnover rate.
 
Input variables: (variables such as wages, number of seats, number of service staff, number of competitors). After being successfully adapted to the field of restaurant business, Taylor et al. (2009) carried out a sample event study in the unit of a restaurant chain to show that the performance of the menus can also be evaluated with DEA. Comparing the results obtained by DEA with the results obtained by the menu engineering method applied to the same menu items, Taylor et al. (2009) suggested that data envelopment analysis is a more effective method.
 
Although a step-by-step and systematic process was followed in the adaptation of FTM or DEA methods to menu analysis, it is not possible to say that the needs and expectations of the practitioners were taken into account at this time. The process starts with identifying the shortcomings of the previous models in the literature instead of determining the needs of the practitioners. In the ongoing stages of the process, no feedback is received from the practitioners, although the method is offered in exemplary restaurant establishments, the main thing here is to collect data for operating the method. Thus, it can be concluded that the models developed in the last period are also far from practitioners.
 
Collections
Although it consists of relatively few exercises, the menu analysis of reviews is useful in following the developments in the literature, seeing the contributions of existing studies to the field, understanding the similar aspects of existing models and their differences. In this context, it is observed that classifications that allow a comprehensive look at the menu analysis literature have been made in the studies carried out by Taylor and Brown (2007) and more recently by… zdemir (2012).
 
Taylor and Brown (2007) discuss the origin analysis models in two main groups and explain them one by one. Accordingly, quantitative menu analyzes are classified as traditional methods, such as matrix models, models based on weight calculations and the model in which LeBruto and colleagues (1995) add labor costs to the engineership. Taylor and Brown (2007) show data envelopment analysis in alternative approaches to menu analysis. … Zdemir (2012) examines the menu analysis approaches in four main groups.
 
These are listed as matrix-based models, models developed by refinement of matrix-based models, fracture analysis and multi-dimensional models (such as data envelopment analysis). It is stated that the performance indicators frequently used by these models are cost of food, contribution share, overweight contribution share, sales volume, credibility, gross profit, profit and sales price. … Despite their important contribution, it can be argued that the reviews document the developments in the menu analysis literature more and as such, they appeal to academics interested in the subject rather than practitioners. For this reason, the reviews are insufficient to show the approaches and applications of the practitioners about menu analysis.
 
Field Studies
It is known that the number of significant studies examining the experiences and approaches of the practitioners on the menu is limited. Field studies considered to be related to menu analysis are Chan and Au (1998); It remains limited to the work of Jones and Mifli (2001) and Kwong (2005). The research of SarÝÝÝÝÝk and… zleyenÕin (2004) from the national literature can also be added to these exercises.
 
Chan and Au (1998) investigated how practitioners used cost information to determine the performance of their menu items in terms of weight, in a study they conducted with 75 managers working in restaurants in China. Food material cost was found to be the most underestimated cost item, as practitioners consider it as a more fractured contribution (calculated by subtracting the cost of food supplies from the sales price). Jones and Mifli (2001) carried out a qualitative research on different issues of menu management (menu planning, menu pricing, menu design and menu analysis) in seven different restaurant chains in England.
 
According to the research findings on the menu analysis, it is understood that the practitioners mainly use the gross profit, sales volume and cost (in evaluating the performance of the menu items). In addition, feedback from customers and guests is also taken into account. Another of the important findings obtained by Jones and Mifli (2001) is related to the improvement strategies applied for menu items whose performance is seen to be insufficient after performance evaluation of menu items. Accordingly, there are two main groups of strategies.
 
These are defined as changes in food (changes in presentation, price, cost, and price) and changes in menu (promotion, positioning, buying, deregistering). Kwong's (2005) research was also carried out in a restaurant that offers Far Eastern Cuisine, as well as on the main issues of the management of the menu (menu planning, menu design and menu analysis). An important determination made by Kwong (2005) in terms of menu analysis is that practitioners do not use the menu analysis methods in the relevant literature, but rather analyze the menus based on their qualitative evaluations based on their intuition and experience.
 
Another important finding is that the option to remove from the menu for menu items with low performance is the last alternative considered. SarÝÝßÝk and… zleyen (2004) examined the opinions of managers on menu planning, design and analysis in a research they conducted with 121 managers working in food and beverage enterprises operating in Kocaeli, and they found that the most important items considered in the analysis of the menus were the most important items.
 
Although the field studies conducted on the menu analysis have presented useful findings in terms of seeing the subject in the eyes of the practitioners, it should be said that they are lacking. Above all, the number of researches done on this subject is limited. In addition, these researches are limited in terms of their subjects (focusing only on the cost element or examining other variables related to the menu other than the menu analysis). Considering the years of publication, their timeliness becomes debatable. All of these shortcomings directly point to the need for an up-to-date research focusing on the views, experience and approaches of practitioners to menu analysis.
 
Method
A qualitative research approach was adopted in this exercise in order to make an in-depth examination of the menstrual analysis practices. Within the scope of qualitative approach, semi-structured interviews as a data collection method and content analysis as a data analysis method were used.
 
… Sample and Interviews
In qualitative studies, the use of buttery sampling method is often preferred (… zdemir 2010). But in this exercise, but a sampling method was used. The five-star hotel establishments operating in the province of Alanya in Antalya and where a la carte restaurant service is offered constitute the working universe.
 
However, kitchen chefs that meet some of the best dishes are included in the example. In this context, the kitchen chefs to be included in the sample (i) must be working at a hotel that offers an à la carte restaurant service, (ii) be the person primarily responsible for the management of the menu of the à la carte restaurant, and (iii) be willing to share their experiences.
 
Since Alanya was selected, there were a large number of five-star hotel establishments (‚etinsšz and Ege 2012) and à la carte restaurant services were widely offered in these hotels, as well as the fact that one of the authors of the employment was residing with the potential is located between. This has made it easier to get in touch with potential participants at the first stage.
 
The main reason for the focus on à la carte restaurants, especially in hotel establishments, is that these restaurants have similar and different aspects with the independent restaurants outside the hotel. Although they show similarities with independent restaurants in terms of having menus that are in force for a certain period and have a very diverse structure, it is different that they do not demand fees from their guests for the food and drinks they consume. Thus, the à la carte restaurants in the hotels have menus that can be analyzed, and the understanding of how to analyze the menu without the pressure of selling price and sales revenue creates a suitable research starting point.
 
Appointments were made with the kitchen chiefs, who were determined by the sampling method and accepted to participate in the study, in order to make conversations, and they were interviewed in their offices in the hotels they met. In this way, 12 kitchen chiefs could be included in the sample. In the interviews made with this number of chiefs, the number of the participants was sufficient, since the data reached a certain saturation (the explanations started to be repeated).
 
In qualitative studies conducted with the participation of chiefs abroad, it is seen that small samples are considered sufficient. Your development Ottenbacher and Harrington (2007) interviewed 12 chiefs in a study they conducted on the innovation process in restaurants. With the permission of each chief seen in the current practice, the interviews were recorded with a voice recording device. On average, interviews lasted an hour. Table 1 contains information about the demographic characteristics and work experiences of the co-workers who participated in the study.
 
How is Menu Analysis Done?
 
Based on the information in Table 1, all of the chefs in the sample of the research are male, with ages ranging from 30 to 56. Six of the chiefs are high school graduates, five are primary school graduates, and one is a university graduate. The duration of their UV experience is between 12 and 40 years. In this case, it can be said that the research participants are people who are experienced in their professions.
 
Question form
A semi-structured question form was used during the interviews in order to contribute to the realization of all interviews with a certain level of consistency and not to miss the main topics related to menu analysis. In this way, it has been made possible to direct the participants to additional questions questioning the details according to the progress of the conversations and to collect data on these issues.
 
There are basically two groups of questions in the semi-structured questionnaire. The questions at the end of the form are intended to obtain demographic information about the participants. In the other group questions, the following points were mentioned to get the experience and opinions of the participants about the menu analysis.
 
¥ Responsibilities regarding the menu,
¥ The points they pay attention in evaluating the menu performance,
¥ Their approach to menu analysis and how they made changes in the menu.
 
Analysis
The qualitative data collected through interviews were transferred from the sound recording device to the computer environment and then deciphered and written down. Thus, texts to be subjected to content analysis were obtained. Subsequently, these texts were analyzed. At this stage, coding, determining the categories, naming the categories and defining the properties related to the categories were carried out. … First of all, the two researchers read the texts once more to gain familiarity. The first ideas that appeared during this time are noted.
 
After the country readings, a code scheme was developed based on the texts with the support of the relevant article. Later, with the code scheme at hand, it was converted to texts again and the process of assigning the content in the texts to the relevant codes was added. This procedure was done separately by two researchers, and then these two researchers came together to compare and discuss their results. These discussions continued until the discrepancies in the codes assigned to the content were eliminated and finally an agreement was reached.
 
Following the coding process, the stage of creating the categories has passed. According to Graneheim and Lundman (2004), the category consists of a group of cherries with common directions, and the categories can also be divided into sub-categories or sub-categories combined to form a category.
 
In this exercise, subcategories were formed by grouping similar codes using an abstraction process, and main categories were revealed by bringing together subcategories according to the similarities between them. During and at the end of this period, discussions were held between the two researchers to reach a consensus on the formation and naming of the categories. Although the plum analysis performed in the exercise is described here as a linear period, in fact this analysis has progressed as a process that includes returns and repetitions.
 
Researchers should also not overlook issues related to the trustworthiness of plum analysis. Graneheim and Lundman (2004), Elo and Kyngas (2007) and Hsich and Shannon (2005) state that researchers can demonstrate the reliability of their content analysis in several ways. The first is to provide detailed information about the research and analysis process. In this way, the reader can understand exactly at what stages and how the research took place. For this reason, in this exercise, detailed information about the research method has been tried to be given as possible.
 
 Another way to demonstrate reliability is to quote directly from the text being analyzed to show the links between data and findings. In this exercise, in the presentation of the findings, direct quotations from the words of the participants were given in association with each finding.
 
Coding in product analysis is also a process that plays a critical role in terms of reliability. Hall and Valentin (2005) point out that the encoding must be done by at least two different encoders to ensure reliability. Therefore, in this exercise, the two researchers did the encoding separately.
 
On the other hand, among the researchers who carried out the analysis, the development of the code scheme, the application of the code scheme to the text and the discussion during the determination of the categories and the search for consensus also contribute to reliability (Graneheim and Lundman 2004). Finally, obtaining opinions from the participants about the findings of the research also increases the reliability.
 
Accordingly, in this exercise, six of the chiefs interviewed with them were reached again, the findings obtained as a result of the research were explained to them and their opinions were asked. The co-workers interviewed at the end of this period stated that their research findings reflected their own thoughts and experiences.
 
Findings and Discussion
The findings of this research are presented in Table 2. As shown in the table, the conceptual structure of the menu analysis in the à la carte restaurants of the hotel establishments within the sample consists of five main categories and ten sub-categories. Definitions for each sub-category are also given in Table 2. However, these definitions are not in the form of formal definitions of the relevant subcategory. It more reflects the culinary chiefs' views on the relevant concept. Below, each main category is described with its subcategories and including relevant quotations.
 
The first of the main categories related to menu analysis in à la carte restaurants of hotel establishments is the need for changes in the menus of the chiefs. The two sub-categories within this main category are named as the beginning of the season and the season work depending on the time of the change to be made in the menu. In the following quotation, it is seen that the participant with the code of K3 is looking at the menu of the previous season at the beginning of the season and can make changes for the menu of the new season:
 
At the beginning of the season, while we are buying the menu, which menu we have applied the previous year, what will we change from the menus this year; main course, warm appetizer, starters etc. identify them and do the exercises ... Ó
 
The quotation from the participant K11 shows parallelism with these explanations:
 
Menus change period of time ... It is revised at the beginning of each season.
 
The participant K2 explains why he needed to make a change in the menu at the beginning of the season as follows:
It happens when the guest sees the same menu every year. So, always innovation, what we can do better, be it in the pastry shop, main courses, hot ... Ó
 
The participant K9 explains the need to change the menu during the season under the following quotation:
 
Because the guests are constantly changing here, the menus of our à la carte restaurant are not changed too much when there is not much demand and the light part ... In other words, at the beginning of the season, we created the menu, two main dishes, four main dishes. hot, entree, beginning etc. As long as there is no such obvious light or something, we continue from there.
 
How is Menu Analysis Done?
 
The findings of the study show that the chiefs feel the need to analyze the menu more often in the periods when they will make changes in the menu. In a study conducted by Morrison (1997) with managers responsible for menu planning of 21 restaurants (16 chiefs, 5 restaurant managers or owners), it was stated that changes were made in the menus for or six-month periods, and this was not necessary.
 
Thus, findings of both previous research and current practice show that the need to make changes in the menu is one of the important factors that determine the need to analyze the menu. Chefs within the scope of this practice regularly feel this need at the beginning of the season, but the performance of the dishes on the menu according to the demands from the guests or the light prices are also overlooked during the season and changes can be made in the menu if necessary. In this case, it is understood that the chiefs participating in the research are open to analyzing the origin, that they do these analyzes periodically (seasonally), and that they can also make (seasonal work) menu analysis outside of the analysis periods according to the need.
 
Based on the findings in Table 2, it is understood that the participants consider two main factors, namely cost and guest satisfaction, in analyzing the menus. Chiefs believe that the cost of a menu item is shaped by the effect of two factors: the ease of preparation of that item and the availability of its materials. In this context, it gives an idea about how important the K7 participant's ease of preparing words is in à la carte restaurants:
 
For the a la carte we prefer this. For example, the fast cooking feature should be selected. There is no à la carte to wait for every meal to cook for hours ... You are sure of its taste, you can automatically eliminate it if the one eats it will definitely be liked but it takes a long time to prepare.
 
The participant K5 clearly demonstrates the effect of the availability of materials required for the production of a menu item on the cost of food with the following expressions:
 
I am in love at my restaurant in ‚s this year. But the only thing I got from all the guests was one of my favorite things. Food is not food. Because the material you used is Turkish material. Made in Turkey you are using soy sauce. Well ... Sorry if you import from Europe, there is an unbelievable cost dimension if you import from Asia.
 
A similar relationship can be seen in the words of the K4 participant:
 
ÒI am preparing, I am submitting to the approval of the general manager. Of course, we prepare and present the cost of these. The flow of the material here is extremely important, so it is important that we find the material that is our raw material and supply it to the plant.
 
In the evaluation of the performance of menu items in terms of cost, the food material cost target determined by the hotel business is also an important factor that is taken into consideration. The following statements of the participant with the code of K9 give clues about this issue:
 
Today my kitchen cost is up; It is 7,20. What did I use? I used two tons of meat this month, 500 kilograms of meat, etc. etc. After the complete inputs are made and counted by this cost department, the number of guests in the hotel is already certain, the accommodation is revealed in their harp.
 
Participants get used to understanding the satisfaction of the guests about the menu items by looking at the number of checks and their consumption levels and in this way, they include guest satisfaction as an important factor in evaluating the menu performance. The participant K1 explains how he evaluates the menu items depending on whether or not he gets any light on the menu of an à la carte restaurant that he is responsible for:
 
Menu planning is directly proportional to the feedback from guests ... Again, I will give the example of the Mediterranean (the name of an à la carte restaurant in the hotel). We have never gotten any from the Mediterranean in years. In the beginning, we did not get any negativity in snacks and desertte in main meals. Therefore, we continue.
 
The participant with the K5 code draws attention to the large number of lights.
 
We are not dependent on one person. Our aim is to capture the percentages of thousands, tens of thousands. Otherwise, it is not very important that a thousand people do not like a person.
It is understood from the following statements of the participant K6 that some co-workers monitor the consumption level of the menu items using a more formal method.
 
For example, the capacity of a la carte is four people? I'm throwing 40 people haven't booked today? I'm taking these 40 people to watch for a week. Our main meal is equal to five. Which of these five equal meals is the most consumed? We are preparing a graphic. What are the least consumed? We're looking for it ... Why is this under-consumed? Does the guest want or not eat or does the guest not? We're getting used to it
 
The participant K7, on the other hand, explains that he evaluates the performance of the menu item by considering a numerical target according to the level of consumption:
 
At 10 percent, we get used to putting a more preferred dish. So we are looking at preference.
Findings show that kitchen chefs participating in the research know they have to meet a cost target. All of the things in hotel businesses are those in which these cost targets are set and, in particular, annual sales, cost and cost estimates are included.
 
There are research findings in both national (Uyar and Bilgin 2011) and international (Jones 2008) literature regarding the use of whole width in hotels as an important interim in determining cost targets and controlling costs. In this case, the need to evaluate the performance of the menu items in terms of cost becomes evident in order to achieve the cost target determined by the whole e for the chiefs within the scope of the research.
 
For this reason, it can be said that the chiefs take two factors into consideration, especially the ease of preparation of the menu items and the availability of the materials used in their production. On the other hand, chiefs show a special interest in guest satisfaction and guest satisfaction is monitored by the level of consumption of the meals and the number of checks received for them.
 
The striking point here is that in the analysis of the menu items in the menu analysis literature, the use of financial indicators such as sales volume, sales revenue, cost and cost (... The use of a qualitative variable (Saura et al. 2008), which was not included, in the analysis by the participating co-workers of this study.
 
According to the findings in Table 3, it was determined that the methods used by the participants in the context of collecting data regarding the performance of the menu items were observing the residuals on the plate, and receiving feedback and evaluation. Checking the plates coming from the guest table after the consumption can be seen by the chiefs as a way of understanding how much the guest consumed a meal and therefore how much he liked that meal. The quotation from the participant K1 reveals both how the plates are controlled and the relationship between this control and the consumption level of the food:
 
After the waiters get the vacancies, there's a bar desk, next to the dishwasher, they drop it over there. The captain or head waiter are taking notes. In the beginning, this was defeated, this was not defeated. We even photograph it, then analyze it. We say yes, we shouldn't put it. Because only 20 of the 200 guests have eaten, and he has eaten half.
 
The following statements of the K3 coded participant support these explanations:
 
Usually we look at the plates after the guest leaves from dinner or while the waiter collects the empty spaces on the table. If the dishes are on the plate, there is a problem there, so if they are not eating, but usually the plates are empty, then there is no problem.
 
Participants see the guests as a very important source of feedback in order to collect data on the performance of their menu items. … In particular, they constantly receive feedback and suggestions from their guests through the methods of listening to expressions, interviewing face to face and / or conducting questionnaires in order to understand the relationship of their menu items with guest satisfaction. It is understood that these feedback and suggestions also demonstrate the behavior of using them in analyzing the menus. The quotations made by the participants coded K1 and K2, presented below, highlight these issues:
 
Our guests remind us what we forgot. He criticizes the guests at the main meal. She can say it's very beautiful but not juicy. But we do not do this by just saying a guest. We collect it, we evaluate the item with the higher number of guests.
 
We have five to six public relations with the following. They ask the guests until the evening of the day. So what do you not like? ... You went to the à la carte restaurant, did not like the meal, did not like the orbay, cold, hot, did not like the taste? In other words, all public relations are filled with them until the evening, they travel, all their guests, that is their duty. They bring us the lightness ... Every day we read surveys, we receive surveys from the guests daily, one hour is routine every morning ... 100 came from the kitchen today, three of the meals say it is cold and for example the red meat is more or the white meat says get more.
 
It is understood that the chefs participating in this research tend to use qualitative methods focused on understanding guest satisfaction in analyzing the menus. This issue is consistent with Kwong's (2005) finding that the managers responsible for the menu do not use the formal menu analysis methods suggested by the related article. In this study, the finding about the observation of the residues on the plate is deemed worthy of discussion in the light of the current literature.
 
Researchers in the field of tourism management or restaurant management, who found a place in the hospital management literature, did not show interest in the academic field, and even in the review of the menu analysis, the residuals in the analysis were not attributed to the distribution of the deposits.
 
There are two studies on this issue, and these have been conducted in hospitals. The development of Connors and Rozell (2004) states that high and low consumption foods can be determined by monitoring and analyzing the amount of residue on plates coming from patients, and in this way, performance comparisons of menu items can be made and changes in the menu can be planned.
 
Kandiah et al. (2006) on the other hand, that the residual rate on the plate can be determined as the amount or percentage of the remaining food; For this, the result of visual examination means that a determination can be made by making a guess, by weighing the plate or by sowing a photo. Although it is not questioned whether the chefs participating in the current research have any knowledge of these two studies, it can be inferred that they have observed the residuals on the plates after the service, with the use of their experience and intuition in order to understand whether the guests are satisfied with the meals they serve.
 
On the theoretical point of view, the fact that a menu analysis method developed for hospitals in the relevant literature is currently being used in hotel businesses may be beneficial for researchers interested in menu analysis in the field of tourism and restaurant management.
 
Participants can apply one of two main improvement strategies for the menu items that they find low performance after analyzing the menus with the methods they use in line with the selected prices. These strategies can be revising and removing from the menu. Below
As stated in the quote from the participant K12, some chiefs may prefer to make revisions more than the option to remove from the menu:
 
I don't make changes very often. Instead of eliminating the menu item completely, I make small revisions and make changes ... According to the reaction of the guests ...
While revising the menu items, chiefs can change the presentation or recipe of the meal. Participants coded K6 and K7 convey their experiences of how they made these changes in the following quotations:
 
There was a famous Italian salad called our Caesar salad on the menu ... But some of our guests reacted. For example, they said that the Caesar salad should also have this ... What are we doing there? Instead of having a dilemma with the guests in the Caesar salad, we are going to change some products.
 
We can make changes to the presentations. But we didn't like it later, we could change it and make the same products as different presentations.
 
Chiefs may also apply to remove a menu item that they find insufficient performance (especially in terms of guest satisfaction). In this way, the meal with poor performance is removed from the menu, but another meal that is believed to perform better is replaced. The following statements of the participant K6 also support this point:
 
If one of the same main dishes does not move at all or if the light has gotten light, remove it from the mening group immediately and replace it with white meat from the same group, if it is white meat, if it is red meat from the red meat group, chicken from the fish group. ,
 
In the relevant literature, it is known that a large number of strategies were proposed by Jones and Mifli (2001) and Kwong (2005) that require changes in the prices, costs and sales volumes of meals. The participating chiefs then take advantage of fewer strategies than the recommendations in the article. However, another point that should be emphasized is that chefs did not consider the exclusion of low-performance meals as a priority option. A similar finding has been demonstrated by Kwong's (2005) practice. In this case, making a revision in the menu is considered as a more priority improvement strategy.
 
Participants fail to mention two important features of the à la carte restaurants for which they are responsible for managing their menus. The first of these is that unlike the open buffet restaurant, which is the main restaurant of the hotel, table service is offered in à la carte restaurants. With table service compared to the chiefs, the guests feel that they receive personalized service in à la carte restaurants and this can be related to their satisfaction resulting from their experience in these restaurants. The quotation made by the participant K1 code presented below shows this:
 
The other difference is that a la carte is served on the feet of the guest without leaving the table completely. The guests come and sit in the à la carte restaurant, they feel a little more special, they are served a little more personally, and a personal service is provided. Even if the ambiance and atmosphere are beautiful, the guest feels a little more special, feels special service and becomes happier.
 
Another feature of the à la carte restaurants, which is seen as important by the chiefs, especially in connection with the menu, is that the guests can benefit from these restaurants limitedly. K8 coded participant uses the following statements about the limited right of use:
 
A daily menu is given to each guest at the hotels. If the guest wants to use that right, they can use it only once from that menu. Therefore, since that guest does not come for the second time, he / she has eaten that meal once.
 
The characteristics of the à la carte restaurants can be effective on the menu analysis approaches of chefs. Due to the limited usage rights of the guests, generally a guest can have the chance to have a meal at the à la carte restaurant once during the season. For this reason, it is not uncommon for guests to be repeatedly exposed to the same menu.
 
Thus, except for getting light during the season, the need to make a change in the menu is not felt much due to the fatigue of the development. On the other hand, it is considered that the guests who eat at à la carte restaurants feel special due to both the limited usage and the table service features, and therefore it is important to be satisfied. This last point can be seen as an important reason why chefs attribute a high level of importance to guest satisfaction in à la carte restaurants.

This exercise was carried out in order to determine the views, experiences and practices of kitchen chiefs about menu analysis in à la carte restaurants of hotel establishments and to obtain findings regarding the conceptual structure of menu analysis in practice. Based on the main findings of the research, the chiefs analyze the menus of the à la carte restaurants with the emergence of the need to make changes in the menu at the beginning of the season and during the season. In this analysis, although cost and guest satisfaction are considered as the two main factors, it is understood that guest satisfaction is more important.
 
Chefs evaluate the performance of the meals on the menu by monitoring the leftovers on the plate and receiving constant feedback from guests. According to these evaluations, it improves the menu performance by removing the dishes that they find inadequate from the menu or making changes in the presentation or meat of these dishes. The characteristics of the à la carte restaurants (table service and limited usage rights) can also be effective in the chefs' approach to menu analysis.
 
It cannot be said that the chiefs handled and examined each menu item individually in terms of specific performance criteria, collected data for each of them regularly, combined and analyzed these data in a quantitative model, and made a performance evaluation based on these analyzes. In short, the participating chiefs do not take a formal approach to menu analysis.
 
Instead, they evaluate the data they have received through the prices (guest satisfaction and cost) they care about (through light tags, surveys or suggestions) or in a very unsystematic way (such as observing the plates) that they evaluate the menu items with inadequate performance. While doing all these, they rely on their experience and intuition.
 
It is also noteworthy that chiefs have an approach that takes into account the guest satisfaction variable that quantitative models in the literature cannot include in the analysis. These reviews allow some suggestions for both chiefs and researchers.
 
Chiefs may consider training themselves to use more formal analysis methods. However, while doing this, it should not be considered that they completely abandon the existing menu analysis approaches. Instead, they can supplement their qualitative approach with the quantitative models suggested by the literature.
 
Thus, they can develop a mixed approach, based on both their own experience and intuition, non-formal (but taking into account qualitative standards) methods they are applying, and formal methods (requiring systematically collecting and analyzing quantitative data). They can also take advantage of being in a hotel building in this regard.
 
They can also receive support from managers who are more prone to financial variables and analysis, such as accounting finance managers and food and beverage managers. In addition, the training of the supervisors on the models in the literature can also help them with the menu analysis approach they will develop.
 
The findings of this study show that researchers in the field of tourism and restaurant management should identify the shortcomings of the models in the literature and adopt new models that will eliminate these deficiencies, as well as orienting to models that take into account the needs of practitioners. For this, the number of studies that determine the needs of the practitioners, examine the applications they make, and determine what performance criteria they want to evaluate, should be increased.
 
Based on the findings of these studies, scientific and systematic model proposals should be taken based on the needs of practitioners. In this context, monitoring the residuals of the free developed plate should not remain as a method that can only be used in hospitals. Exercises should be made on how to adapt it to the field of hotel and restaurant business.
 
This research has some limitations, especially due to the use of a qualitative research approach. The use of buty sampling method in the qualitative approach makes it impossible to generalize the obtained findings. However, this exercise can be a first step for future exercises regarding the needs and approaches of the practitioners regarding the menu analysis, and with this feature, at least, it can lead to the basic concepts that should be researched.
 
The texts analyzed with plum analysis are then composed of a large number of content that can have meaning, and the analysis of these content can be influenced by the researcher's past experience and qualitative research skills. For this reason, in this study, the content analysis was carried out by two researchers and discussions were held at almost every stage of the analysis process and it was in the context of seeking consensus.
 
Another of the important constraints of work is that the findings (five main categories and ten subcategories) may not reflect all the categories actually present in the analysis of the menus of a la carte restaurants in hotel establishments. Only chiefs were included in the research as the persons responsible for the menus of the à la carte restaurants.
 
In case of interviews with other managers (general managers, food and beverage managers or restaurant chiefs) who are responsible for the menu instead of the chiefs, it is not known whether there will be a difference in the findings. For this reason, in future research, expanding the sample to include different administrators who have responsibility for the menu will yield useful results.
